Baked Sweet Potato Chips with Blue Cheese Sauce, Bacon and Green Onion

Let’s kickoff this party with something sweet, salty, smokey, and creamy.  What else could you ask for?  This looks like perfection to me.  I’m loving these baked sweet potato chips with blue cheese sauce, bacon, and green onion
1 pound yams, sliced thin on a mandolin
1 tablespoon canola oil
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon onion powder
1 tablespoon butter
1 tablespoon flour
½ cup hot milk
4 ounces gorgonzola, divided
3 green onions, sliced thin
4 slices bacon, cooked and roughly chopped
