Baked Chicken Taquitos

This baked version of taquitos is healthier and less mess in the kitchen than the traditional fried ones. The flavorful chicken filling makes great tacos as well.

  • rotisserie chicken -fully cooked and seasoned.
  • 2/3 - 1 cup of jarred or fresh salsa 
  • 1 cup shredded "Mexican blend" cheese
  • 1/3 cup sweet white and yellow corn niblets
  • 1/3 cup canned black beans, drained and rinsed well
  • 1 tsp ground cumin

Easy Sesame Chicken

Easy Sesame Chicken - easy and delicious, as promised! Next time, will use a wok and fry the chicken in two or three batches. May double sauce and halve the sesame seeds - there were way too many for our taste!

Loaded Potato & Buffalo Chicken Casserole

Loaded Baked Potato & Buffalo Chicken Casserole - Dinner. Made this and it is delicious. My little family of 4 almost ate the whole pan!

These bars are no joke. They look so fancy with all of those layers, but they were really easy to make.
Layer 1:

The Worlds Best Chicken

This is known as the "World's Best Chicken" and for good reason: it is amazing! There are only three ingredients to the marinade - Dijon mustard, maple syrup and vinegar (either rice or apple cider). It takes one minute to mix up and pour over chicken. I use whole grain Dijon mustard for an extra kick. I make this at least every other week and the left-overs are to die for!

Mini Chicken Parmesan Meatloaf Cupcakes

You know me; I love minifying things. Especially when there are 35 pounds of melted cheese inside a minified thing. The cheese doesn’t have to be mini, but everything else does!

This works. Don’t ask me how, but it does.

Anyway, today I’ve minified some meatloaf. Chicken Parmesan meatloaf, to be exact. Stuffed with mozzarella cheese. 35 pounds of it.

  • 1 cup panko
  • 1/2 cup Parmesan cheese
  • 1 tablespoon extra-virgin olive oil
  • 1 egg
  • 1 pound ground chicken breast (or dark meat)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced white onion
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 6 fresh basil leaves, torn
  • 1 pinch salt and pepper
  • 16 small mozzarella cubes, cut from a block
  • 2 cups Muir Glen marinara sauce


  1. Preheat oven to 400 F.
  2. In a small bowl, combine the panko, half of the Parmesan cheese, and the olive oil. Using your fingers, combine the mixture until it’s evenly coated. Set aside.
  3. In a large bowl, lightly beat the egg. Then add the chicken, red bell pepper, onion, garlic, oregano, the remaining Parmesan, basil, and a pinch of salt and pepper. Mix well with your hands.
  4. Lightly coat a mini muffin tin with cooking spray. Place a couple of tablespoons of the chicken mixture in each well. Nestle a cube of mozzarella in the center of the mixture. Pat the chicken over the cheese to completely cover it.
  5. Sprinkle the panko/Parmesan mixture on top of each chicken mound, lightly pressing it into the meat.
  6. Bake for 25 to 30 minutes, or until the panko is golden brown and the chicken is cooked through. If needed, you may broil the panko to further brown it.
  7. Let rest 5 minutes. Then using a knife, lightly loosen each cupcake from the muffin tin.
  8. In the meantime, warm the marinara sauce in a small saucepan.
  9. Serve meatloaf cupcakes with warmed marinara.

I love making casseroles, and this one's so simple. The chicken breasts, Swiss cheese, and ham are cubed, rather than stuffed and rolled, giving you all the flavor of Cordon Bleu in much less time.

  • 1 whole Cooked Chicken, Bones Removed, Meat Diced Or Shredded (rotisserie Chicken Is Excellent, Should Be 5-6 Cups Of Chicken
  • ½ pounds Very Thinly Sliced Deli-style Honey Ham, Rough Chopped
  • ¼ pounds Thin Sliced Baby Swiss Cheese


  • 4 Tablespoons Butter
  • 4 Tablespoons Flour
  • 3-¼ cups Milk (I Used Whole Milk)
  • 2 Tablespoons Fresh Squeezed Lemon Juice
  • 1 Tablespoon Dijon Mustard
  • 1-½ teaspoon Salt
  • ½ teaspoons Smoked Paprika
  • ¼ teaspoons White Pepper


  • 6 Tablespoons Butter
  • 1-½ cup Panko Bread Crumbs
  • ¾ teaspoons Seasoning Salt
  • 1-½ teaspoon Crushed Dried Parsley

Strawberry Cheesecake Bites

I feel like I don’t even need to say a word about these Strawberry Cheesecake Bites from Simply Gloria but Oh My Gosh!  These will be made in my house in the very near future.
  • 1 (5 inch) strawberry cheesecake (or your favorite, of course!)
  • 8 ounces white chocolate
  • Use a small cookie scoop.
  • Scoop into the cheesecake, with the crust.
  • Save 2 tablespoons of crust.
  • Place scoops onto parchment or wax paper.
  • Place into freezer for 20 to 30 minutes.
  • Melt white chocolate over a double boil. (Chocolate in a heat safe bowl setting over a pot of hot water. Do not let the water touch the bowl.)
  • Take the scoops of cheesecake out of freezer and form into rolled balls.
  • Dip fork into chocolate.
  • Place a scoop of cheesecake on top of the chocolate covered fork.
  • Dip cheesecake and shake off excess of chocolate.
  • Immediately sprinkle crumbled graham cracker crust on top of chocolate.
  • Repeat process with the rest.

  • 12 jalapenos, halved and seeds removed
  • 1 box puff pastry (2 sheets)
  • 8 ounces cream cheese
  • ½ cup bacon pieces
  • 1 cup cheddar, shredded
  • 4 cloves garlic
  • 1 egg

Grilled Cheese Rolls

Looking for another great recipe the family will love. Check out these neat little grilled cheese rolls. They are just like a regular grilled cheese but actually in a roll. I made these a couple of times for my kid and they turned out to be a total hit. Even my husband loves these things.

  • 6 slices wheat bread
  • 6 pieces American cheese
  • 1 tablespoon butter


  • Cut the crusts off the bread.
  • Flatten your crustless bread squares with a rolling pin and then top each slice of bread with one piece of cheese (don’t be tempted to use more cheese; in this case, one is plenty).
  • Melt butter in pan over medium heat.
  • Roll your cheese squares up and cook them in the melted butter over medium heat, seam-side down first to secure them, for about five minutes until cheese is melted. Roll them occasionally while cooking to crisp all sides.
  • Remove from the pan and your grilled cheese rolls are ready to enjoy!

Waffle Iron Hashbrowns

Perfectly crisp hashbrowns just got easy!! It’s time to pull out that waffle iron and cook up some of these easy hashbrowns for breakfast. Brilliant, I say! A few months back, I got the waffle iron buzz, and did A LOT of experimenting. You can cook an entire breakfast in these things! Scrambled eggs, cinnamon rolls, hash browns, and then perhaps some brownies for later.
  • 1 bag frozen Cascadian Farms Spud Puppies
  • salt to taste
  • (for ketchup serving, if desired)
  • Spray a hot waffle iron generously with nonstick cooking spray.
  • Place Cascadian Farms Spud Puppies on top of the hot waffle iron. Press the waffle iron closed, using a bit of pressure as needed to slowly lower the lid over the Spud Puppies. After 1 minute, open the waffle iron and add any spud puppies to empty spots, as needed. Close the lid and cook until crispy and golden brown.
  • Remove from waffle iron. Salt lightly. Serve with ketchup, if desired.

Parmesan Chicken Manicotti

One of things that sure puts me in a better mood is yummy food. And this one is definitely yummy. I love manicotti and I usually make them with spinach and ricotta cheese. But this time, I did something different… one because I didn’t have any frozen spinach… so I thought, how should I use manicotti without any frozen spinach. And a thought came to me “let’s stuff them with some shredded chicken, Parmesane cheese and ricotta together!

  • 7 pieces Manicotti, cooked according to instructions
  • 1 cup part skim Ricotta cheese
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded cooked chicken
  • 1 egg
  • 1 teaspoon oregano
  • salt and black pepper
  • 1 can Italian style crushed tomatoes
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh basil leaves
  • ¼ cup Parmesan cheese
  • 6-8 basil leaves
